They provide all meals, camping gear, safety equipment, guides etc.

This was recorded for the Sedona Arts Center, but is good info on how to pack for any river tip.

Paint the morning and afternoon light as it casts its warm glow through towering canyon walls and relections off the river. This 286 mile Colorado River painting trip down the Grand Canyon has been custom-designed especially for plein air artists. Camping locations are selected for an inspiring array of compositions with midday rafting hours taking you from one extraordinary painting site to the next. Instruction is available for those who want it, but in a laid back less formal setting. Some artists simply wish to paint on their own and that's fine.
Logistics
We meet at a hotel in Flagstaff Arizona, where we spend our first night, and get our dry-bags and instructions from our outfitter.
The next morning we are shuttled from the hotel to Lee's Ferry, our launch site, where we receive our life jackets, load our gear, and begin our expedition! After a week of stunning scenery and adventure (including no cell phones or email), we leave the river at Daimond Creek, 226 river miles from where we started, and we take a shuttle bus back to Flagstaff (about a 3 hour ride) usually arriving mid-afternoon.
A typical day painting along the river; This trip is designed for artists who want to paint. Unlike most commercial trips that get you on the river early, we stay in camp until about 9am, this generally allows about an hour and a half of painting time. In the evening we usually get 2 or more hours to paint.
